Mayonnaise Biscuits

This is a recipe straight from my mother.  I have no idea where she learned it, because these definitely are not my grandmother's scratch made biscuits.  However, these were a consistent part of my childhood and they are delicious.  They whip up quick and always satisfy.  Even my mayonnaise-hating husband asks for them at least three times a week.



Mayonnaise Biscuits:

2 cups self-rising flour
1 cup milk (I used rice or soy milk)
1/2 cup mayonnaise
1 tablespoon powdered sugar
 (Note:  I didn't have any powdered sugar, so I dumped about 1/4 C into my food processor and blended up some)

Preheat oven to 350.  Grease muffin tin (makes 7 biscuits so use a full tin).  Mix all ingredients, divide evenly in muffin tin, and bake 20 minutes.

Voila!  It's that easy!
